The easiest way is to buy several and find the pairs through that. It is definantly easier to tell the difference between males and females. Males will be larger and the anal fin with be long and pointed, whereas females will be smaller and the anal fin will be small and arrow shaped. Another thing to look for is the orangeish red on the belly and it will be brighter when in breeding mode.
Convits are awsome if you want a small fish that won't grow too large for a normal aquarium. They do breed like rabbits and most pet shops won't take them for too much money. I wouldn't suggest feeding them to other fish because they do have sharp spines that could possibly cause damage.
If you are going to take the time to breed them, don't do convicts, unless you are doing it so you don't have to buy feeders anymore. They are the rabbits of the fish world, breed something a little bit more rare like cockatoo.

but they are special to me the male is short body with a giant hump
and the female is very red at breeding time
but the first fish i bread was kribs and it might not be as easy as cons but much more rewarding
