I won't be getting a tank anytime soon, but I'm just curious. What single pair of CA/SA cichlids would best utilize a 75g tank? All opionions welcome!

Cyano is a true texas cichlid. Carpintis is a more southern species, and looks very similar to a true texas with more brighter and larger spots.
