Hi, are there any breeding pairs of cichlids that would fit in a 60 gallon that wouldn't kill columbian tetras or a pleco or a catfish

Archocentrus (Cryptoheros) nanoluteus, multispinossa or panamense

although with the tetras and pleco, I wouldn't expect any cichlid fry to survive if they did breed.

You could go with apistos or rams
I have 2 breeding pairs of apistos (A. sp. pebas and A. oregon) and they've really grown on me.
Like Duanes said, the cichlid fry will most likely be consumed by the tank mates and that is even more likely with apistos or rams

Yeah. The point in having a pair was so I could see there breeding colours and behaviour. Would a firemouth pair work?

My personal rule is 1" of adult species per 10 gals, meaning a pair or trio not over 6" in a 60 gal tank works.
So I guess an average sized pair of firemouths, at least until they breached 6" could work.
My size rule only applies to small-medium cichlids though, once cichlids start hitting the 15" range I believe capacity should be expanded.
