Breeding pair of what large CA/SA?

I voted other. I would choose one of the carpintis varieties. You could easily keep a pair of them divided in a 75g for life. Plus they are colorful and easy to get rid of. Since they are bright colored at 1" most LFS will buy the fry or at least trade you for credit. Most of the ones you listed will not be easy to house or get rid of. Dovii fry are everywhere and they need a huge tank, Umbees are the same as Dovii, festae do not breed that easily and require a large tank, jags are a dime a dozen, most of the others on the list will not be real easy to get rid of the fry. The istlanum would be the only exception to that.

So I'm thinking a pair of festae for the tank in questions based on results. I do also have a 75g I intend to setup soon... do you have a suggestion on what carpintis morph?

All of them are nice. I keep Escondido's, the vontehillo seems to be popular right now as well.
 
I would pick Festae< although it is a tough choice, because love the Umbees because they are open water swimmers and are beautiful as well, and then again I like the Haitensis too... But yeah I would choose Festae.
 
Def. Festae! It takes some patience to grow them out but they are spectacular in breeding dress!
 
I voted Festae for the abundance of differing brillant coloration but as VRWC pointed out tank size is gonna determine which species you house. If 75 gal. is in fact the tank your thinking than the "other" box would be your direction as most fish on your list will need 125 gal and more.
