What would be a good size tank to keep this pair in for breeding purposes, if things work out that way?

55gal at the minimum. I'd go for 75gal or larger. Really, why would you want to give them the minimum? The bigger the tank, the better the chances.

I was just wondering. I'll give them the biggest tank I can. I mostly wanted to make sure this 55g would last for a while if I needed it to.

I have had Sveni, Sp. Pacaya and Sp. Belly Crawler spawn multiple times in 36" x 18" x 18" tanks, that would be 50gal or so. I have done an absolutely GIANT pair of "Lepidota" (12"+ male) in a 48" x 18 x 18 75 gal. No problems with either, as long as they are bonded. . . Never lost a female in the process, I have had females kill males after spawns though.
