I'm entering the culinary field and from what I've heard...Moroccan Cuisine is the next big food trend, which means goat and lamb meat. It's good stuff

you don't say... :FIREdevil

I love goat, I once combined the slowroast method with a jamaican dry rub to make a goat crown roast filled with a wild rice/scallion/mushroom stuffing, yum!

I was in Sint Maarten/St. Martin (whatever you want to call it) one time a while ago and I was eating some ribs. They tasted great. Very spicy and easy to eat a lot of it (they were real small ribs, maybe baby cows?). After the third day or so I had eaten about 5 racks of rids. Then I noticed something... There were no cows on the island! Everyone just had a goat tied to a stick in their front yard. I liked it when I thought it was cow so I guess I'm a goat eaten man. This is kind of making me hungry.
