Can I add an eel or catfish

Nah, they are more of a light grey color. I have one that is 5.5" or so and he is very very active. Always swimming around at all levels of the tank, constantly sifting through the sand looking for food. I picked him up around 6 months ago from the LFS, I believe he's stunted based on his fins curling up, maybe he's just active because he enjoys a larger tank

OK so would a peacock eel or 3 rope fish work? Or maybe a peacock eel and a stripped rapheal?

OK so I think I've narrowed it down to either a peacock eel or a black ghost knife. Those are the two I want most. Will with of those work? I really like the knife.

The jack dempsey is the only potential problem I see. I'd get rid of it and add the black ghost knife.

If you get a bgk, you'll likely have to target feed it since there are a number of active species that will snatch the food up before the knife has a chance to feed.
Polys aren't a good idea since they'll feed on the rainbows.
