can i change the substrate in my aquarium?

This is how I have done it in the past. Makes it much easier and you dont get all the mess in the water colum.

Black and white mix looked horrible IMO. I just read a post on here a few days ago of someone changing their substrate to regular PFS. They had all black and decided it would be a good idea to mix it with white and said they made a horrible mistake mixing them and ended up removing it all.
 
if you like the look of the light colored sand then just add a black background. i think a lighter sand and the "natural" look is btter IMO. heres a pic of my tank. i have "golden" sand i got off some website with a black background and i couldnt be happier with the color of my fish. You can remove the entire gravel at once and then add the black. It is not really going to disrupt much.
 
my only advice is dont use black if you have a salvini. mine was moving up the ranks fast then i upgraded tanks and put all black gravel and he tried blending in w/ it or something. he turned real dark for months, i was actually gonna give it to a friend of mine but he died acouple days before i got him out
