I feel like if it's large enough and the transition is really slow it would be okay.. Think of all the crazy twists and turns mother nature plays on these fish in the wild. If its controlled and you see it going south you have a good chance and fixing the problem

I don't think it will work in the Bay area. I fish the Delta, Clear lake, Barryessa all near you and alot of them can go as low as upper 30's and low 40's water temp. I would think that would kill them.

thats where my question comes into play..what if raised in lower temps? would they adapt to it

As long as you can help them fight off sickness and parisites. They will adapt to the temps, but I don't think they will be strong enough system wise until the third or fourth generation.
 
75 degree is probably the lowest I would go. You may be able to get it down to 72 but I think that will be pushing it!
