Head shape is a myth. Both males and females can develop a large head hump. The only good way to sex an angel is by the papilla.
there are a few people who have been breeding angels for a very long time, that can make very accurate guesses, and who are rarely wrong if you could find one of these they could probably make an accurate suggestion!

I have fairly good luck with guessing sex on angels by looking at them head on and looking at the fullnes of the lower abdomen. This is to say if given a group of mature angels I can generally pick out a pair. Males tend to have more of a V shape compared to the females U shape. Also, males tend to be the larger more aggressive fish in the bunch. Not 100%, but it has worked pretty well for me in the past.
