If your nitrite test was higher than prior I personally would just let cycle complete its course. How are the Goldfish ? Don't over feed

It's been at 0.50ppm for over a week and gold fish are fine eating like pigs, so you think just leave it ? How long does it normally take for a tank to cycle as mines been running 6 weeks now
Like was stated previously when you added the 8 goldfish it increased the bio-load causing a mini cycle. Feed fish once a day lightly.
Since you stated the nitrite level stayed the same for a week go ahead and do the wc.

I done a 50% water change last night and I just tested the water today and ammonia is the same as always and nitrites gone up to 1.0ppm and nitrates still at 160ppm I'm so confused on what's happening it's never took me this long to cycle a tank before it's getting stupid now
It wasn't cycled Saturday. Why did you think it would be cycled on Wednesday?
So you have:
1) a while to go, or
2) bad test kits, or;
3) bad test procedures
Take the water to a fish store and get them to test it so you can eliminate 2) and 3).

The tanks been running just over 6 weeks now and I have the API test kit I follow what it says exactly and I've tested every day and ammonia has never changed from 0.25ppm, nitrite was at 0ppm now it's crept up to 1.0ppm and nitrates been up and down but it's stayed at 160ppm after a 50% water change.
