Oh and do you think that I could house 2 in the 100g by themselves? At $150 a pop I don't want to see one kill the other.
Not a good idea chinese softys have to be one of the most agressive to their own kind, wich is very surprising considering they are bred and kept by the thousands in chinese farms. But in the case you are sujesting one of the hachlings will inevitably constantly bully and bite the other untill he dies. It will not work. Adults take literaly chunks from their conspecifics;)

here are a couple of pics I took this morning while moving him to a 2ft divided area of the tank. Is it a definate chinese soft shell?

Hi guys,
Just noticed my Pelodiscus sinensis has alittle bit of peeling on his shell. Is it normal that soft shells peel? Haven't got a pic yet but can maybe try if needed.

Yes its comon and normal unless its acompained by sick looking yellow or white paches wich would indicate a fungal or bacterial infection. Just make shure that you have a basking place for your tutle;)

Nice pics of the turtles. How big do they get? I know florida softshells get huge.
They are among the smallest softshells. Adult males reach about 22cm and females 25 cm max;)
