Caridina multidentata predates Caridina japonica, both describe the same species, which makes C. japonica invalid.
 
I've got some amanos in a 20g community tank that is heavily planted... they are nice, and I definitely see them eating scraps.

MTS are good cleaners? Sounds good, I was thinking about picking up some, and love the look of them.

A big no on the crayfish. I love them, but they may grab some of your fish, and mine would rip plants up for fun.
