I somewhat agree to what pcfriedrich mentioned. Try separating it from the other oscar and feed him well... the colours might become more intense and stable. Since it's already shown you colour 10% time, that means it HAS colour, just that it's reluctant to show in front of the other O.
A bit off track... I once had 2 malawi peacock in the same tank and for 6 months one of them never showed any colour. I thought it to be a bad specimen, until the dominant peacock was killed by a mbuna and it promptly became colourful!

I think you'll see the pattern stabilize. I doubt he'll ever have more red other than the eyespot, but the pattern should show up more often. When he's uniform pale like that it almost looks like he's just stressed; new bigger tank and better conditions should perk him up. It's early yet.
 
Thanks everybody. Yes, they both have some mild to mod. HITH disease. My oscars never had it when i kept them years ago, i cant tell if its active or just scars from previous outbreak. I have upped the water changes and put in some melafix for the red ones severe case of pop eyes. Its seems to be helping the pop eye, its receding back into the head and the hith pits im not sure if they are old or current pits. How do you tell, i assumed they are current from the popeye but they dont look infected or anything. The red one had it much worse in the past than the other one and has a dent in his head , but both have signs of it. Im considering using some maracin 2 for it but not sure if its a active case, how do you tell if its active or not ? How would i tell if the maracin is doing anything ? Do the holes seal up if its working ?

They seem to love a decent sized tank after their horrific tank conditions at the previous owners place.

i belive theyre called olive green oscars, no different but oscars have a range of colours going from jet black to like yours (olive green)
 
Thats right, green or common oscar is the name, both are accurate i believe. It is the natural coloration found in the wild. Most or nearly all of the fish found commonly in the LFS are not natural coloration, they have been tweaked to get the colorations, usually line breeding or crossing. For example i think the common tiger oscar is a cross between the solid red and the green (or wild coloration) oscars, then they line breed to get the red very intense on them. I could be wrong but i think thats how its done.
 
Yes...and I'm thinking that if you breed tiger x tiger you'd be bound to have some with varying amounts of red and maybe some "throwback" wild looking ones.
