I know it is not a snapper, just was posting an obese turtle for similarity.

oh, well most the big soft shells look obese out of water because its the way their body is made. when their in the water it looks totally different

Yeah I agree. as well do snappers, but this one is overweight. no doubt.
 
I don't think you're going to have problems with beef liver, trim the fat and you're golden. The key is variety. Some things are too fatty, but as long as you don't overly feed fatty foods you should be fine. If all else fails just buy a tread mill for you turtle and strap it in
