If you want veggies that is easy to feed, then get NLS Algaemax 2mm. It has 4 kinds of aquatic "vegetation", which is way more than algae wafers commonly available.

I’ve fed them dried Mysis Shrimp, Bloodworms, and frozen brine shrimp. Anything else? What are scuds?

And agree with Rocksor, Congo Tetras are omnivores, so any pellet (like AlgaeMax) is a good choice.
And because I start a lot of tropical plants (terrestrials) in buckets with a few inches of water, they tend to get mosquito larvae every couple days, so I dump that water (with the larvae) in the tank to feed the fish, and avoid getting mosquito bites to boot.
