You all have adorable convicts.

My convict has very light stripes during the day. When just his light it on, they are darker (light is filtered through tin foil), and they are even darker still when all the lights are off on or near the tank. These photos don't doing justice. He has a pretty good hump and really long flowing fins. His only flaw is that is kills EVERYTHING. Including any girlfriends.

Meta (the pink one of the lesbian pair) was like that, and lived by herself for 8 months. I ended up having to put Attila in there with her because I needed Attila's tank, so I tried it and crossed my fingers. Turned out Meta just needed to meet the right fishy apparently.

But yeah, my male loses his stripes and is almost always gray until they spawn and the eggs hatch, once they're free swimming, his stripes come back and he defends... although he's still petrified of my hand, he HATES the gravel vacuum and pummels it regularly

I wouldn't say the stripes disappear for good, but if you keep your males in a different tank than females (like I do), you likely won't see them again.
