could i keep a grass pickerel and needle nose gar or rocket gar together?

No.

1. Temperature
Pickerel are cold water fish. Hujerta are tropical. The Belonide's lower end temperature overlaps slightly with the Pickerel though.
2. Water Type
The Needlenose strongly prefer brackish water!
3. Agression
The pickerel will either out compete the other two for food, or kill the other two if they manage to hit it quicker than the pickerel. It won't share!
