With the small size of your tanks, breeding killiefish would be a good choice.
Update:
Set up the 10 gallon and 2.5 gallon. I put a 7.5 watt light on the 2.5 and a 65 watt light on the 10 gallon for growing plants. I also put in a 66-cell planting tray for propagating plants, each plant goes in one of the 66 cells, each type of plant has a row with 11 cells. Some plants I am trying to grow are Anubias afzelii, mini sword, ect. I also put a male veil tail snakeskin guppy with 2 females in the 2.5 to breed. The fry will go in the 3 gallon. I am also planning to add some pink red Ramshorn snails to breed and sell.
yeah forgot about this, with out the proper spectrum your plants cant carry out photosynthesis and will eventually dieSadly, watts on lights dont mean much these days with LED's T5-HO etc... Its more about the light spectrum and whether is suitable for growing plants or not...
With that being said you ultimately want to get something between min 6500K and max 10000K

Before this i have successfully grown many plants in this tank with this light, algae is not really a problem if you throw in some ramshorn snails. Hopefully the snails will breed too.
Kavin: I noticed you said something about getting another 10, money/care isn't the problem, it is that all these tanks have to fit on a 36" x 18" space. 2 20" 10's will not fit
I do have a small desk, but i need that space. I realize that the guppies might be happier in a 10. Could they go in the 10? My worries are it has really bright lighting, and they might eat the snail eggs and baby snails.oh alright, just my suggestion, is that all the space you have? an extra 10g wont take up much space somewhere else, it would be better for your fish but its all good if you cant
