I've kept african cichlids with Cryptocoryne undulata and had next to no problem with them chewing on it, for ever leaf they would clip 5 more would pop up. I guess my question is if I put a Tropheus duboisi or other such super herbivore in my planted tank, or place said plant in a tank with that fish, what will happen? Will it destroy the Cryptocoryne undulata? There is also broad leafed anubis and java fern in the tank but I understand that the consumption of that and java fern is limited because of the tough nature of the leaf and its bitter nature.

Sorry if this is already a thread some where.

I've never had any fish eat my Undulata. Even if they did, the plant grows so fast that it might be healthy for it and your tank.
