whats the worst that can happen if i do a water change and add fish today?

If you've seen nitrite spike and then go away, and the ammonia is gone 5 hours after you add it as you said, and you're showing some level of nitrate, I think it's safe to consider your tank cycled.

The fish die... Get ya some Cheapo Fish and see if they die or adjust. The smaller they are the harder they will be able to overcome new water and the Cheapo Guppies will help cycle. DO NOT GET FEEDER GOLD FISH. They carry to much parasites and will infect new young fish. Feeder guppies are better.

don't add all those fish today! Maybe one or two. Do a water change tomorrow after ammonia is generated by the poops:ROFL:

Best to always play the safe side you could over work the bacteria and throw the tank into another cycle. Better to start with 1 or 2 and work your way up; you'll appreciate it in the end and so will the fish.
