I am about to get a 65 or a 75 Gallon tank. I am New to fish keeping.

What would be the easyest way to cycle one of those tanks? It will not be stocked with anything but 2 severums and a Gold saum all three under 3".
What would be a good easy way to do it in 1-2weeks?

If you want it done in that timeframe, best thing you can do is use a filter from a cycled tank or use Bio Spira...
 
Or, you can do like I did and throw the fish in there to start with and do big water changes every other day when the ammonia starts to climb. I did this and I didnt lose a single fish. Check my threads, I have a long thread discussing this...

This is sound advice. You can also borrow substrate from an established tank for bacterial variety, alos fairly quick.
 
Yes if you can get bio saturated media from a running tank you will be good to go. Established substrate and bio material is really good way to go man.
