Carbon can be nice for removing the tannin stain from a tank beyond that the rooms better used for more bio.

Will the tannins mess up a nitrate test? I have drift wood in the tank and there are noticeable tannins in the water

Nope I have leaves, branches, and driftwood in my smaller aquariums. Never had test issues.

Shoot I thought it would have. I am getting nitrate levels now of 40 ppm

Stability by Seachem full 7 days follow the directions and use prime if you are doing a fish in cycle. There is a good 30 day plan on there website, it works.
