That makes sense, thank you for that information. But due to the sensitivity of discus, I have to keep ammonia nitrates and nitrites at 0ppm.
I don't really understand this reply because ammonia and nitrites should be zero in both tank and tap..? Keeping nitrates at zero is not needed even for discus.

If you want to get better water quality I think the best way is to take same fish out, because looking at your stocklist it is not really moderately stocked, but heavily stocked. Those 2 Synspilums create a lot of waste and the bigger they get the harder it is to keep your water at great quality for your discus. It will probably just get frustrating, especially since the Synspilums may start to stress your discus since they are a little too much to keep as tankmates.

But if you want to try, I'd go for 2x or 3x 50% water change a week.
 
Yeah, discus are finicky. I am lucky though that I chose to go with Discus Hans discus because they are very sturdy fish. But with them i keep 5 rams, two synspilums, and three ebjd with 5 discus in my 110 gallon. Its moderately stocked but my water parameters stay good. The problem that i am perceiving is that Hans makes this fantastic food that makes the water dirty unfortunately.

There is a saying in my house that the best meals create the biggest messes later on. I have found this to be true of fish keeping as well. LOL

I second Amphil's recommendation to remove the Syns to another tank since they are messy fish that will dirty your water and make it necessary for daily water changes to keep those discus comfy. Not to mention some Syns get nasty as they get bigger and your rams will become snacks (possibly the discus too).

I am making the assumption that the EBJDs are small, but they will grow to terrorize and maim your discus, and kill your rams.
