Define Stable?

Does tank location have to do with stable color?
i use to have my dats in my living room 75g tank and use to be stable all the time. Then when i move them into my room in a 75g tank they tend to be unstable eversince. its been 3 months already and still unstable. then one day I i had to put them back in the living room tank and they became stable again.
 
my widebars are stable until they feel like throwing down.... if their goin at it with another dat their colors change dramatically; so I would say that the stability is based on their mood; they don't turn black or anything but the bars kinda fade.

BTW do you guys notice dats shake when their scrapping.... mine do; i see there bottoms fins shake when they fight it looks funny it seems that their soo pissed...

Are the params the same?
is there more foot traffic by people going past the 2nd tank?
is one of the tanks by a heater/window?
im guessing they have diff tank mates in the 2nd tank?
are there less hiding spots?
more/less light getting to the 2nd tank?
different color gravel?
different size tank?
less/different filtration?

There are really tons of factors that could cause this
