down here they both are very cheap and yes it is crayfish but we say crawdads or mudbugs instead

Well, there are records of ppl who feed the whole thing and their fish get choked or the sharp edge of shell accidentally pierce tru some body part etc etc...
De-shell and chop into bite size(unless the crayfish is baby and small enough to feed your fish's mouth) is mainly to play safe...and allow the fish to digest better.
