A superskimmer 65 in the first chamber with carbon bags over the intake, a 3" dsb and 5lbs of dry rock rubble in the middle chamber and a 380gph pump in the last one

Yeah but I'm having a hell of a time getting the 380gph return pump and 300gph overflow to run together lol. I've been working the ball valves like crazy

Try gate valves. The pvc ball valves did not work for me either - they were just too hard to make small adjustments with.

The gates gave me a lot more flexibility.

Before you buy them, make sure each one opens and closes easy also. Not super lose, but not tight etc.
 
My cents - Turn the skimmer off and remove the carbon - these 2 are catching and removing any/probably all dissolved solids + protiens that decompose further creating ammonia to nitrate. You won't need carbon or skimmers til' you actually cycle thru and have life in the tank.

Well I turned the skimmer off and took out the carbon. I also added 10 hermit crabs so we will see what happens
