Before I go ahead and get a couple ATF together I wanted to know what other fish can be used as dithers for my future ATF?

I know the typical ones are red tail tin foil barbs, and silver dollars.

I want a tank with 2 or 3 ATF and the rest dither fish. I just want to be able to have variety in the tank

silver dollars, pink tail chalceus, brycons.

Although I have no personal experience I'd stay away from Brycons as I've heard they can behave very aggressively much like a Dorado

Depends on the species of brycon. Some, like the dentex, can get nasty but an atf is more than capable of keeping a brycon in line as long as the atf stands its ground

Tinfoil barbs also make good dithers, but honestly, when ATFs get big, they will eventually kill and partially eat the dithers. Mine were killing the dithers when they grew past 16".
