The main idea of getting one eat pellets is to let them taste it once.
That will slowly let them accept pellets...

They can't digest it as they don't eat it in the wild.
And it'll make your tank water go bad way too fast, considering Channas don't like water changes and should have one or two yearly water changes, it's not something you should do.

Is it honestly as little as that ? Is there point in even having a filter if its that little ?

What species are you going for?
As different species will definitely have different requirements and needs.

Some snakeheads are from riverine habitats, some are from hill streams, some from swamps.

Similarly some are predominantly piscivore, some are predominantly insectivore, some are topwater hunters, that means anything and everything is good.

So unless we know what species it's gonna be difficult to ascertain what all is a good choice of food.

Again this depends on species, hill stream Channa and riverine require a good amount of current and filter, swamp Channa would prefer standing water.

Filtration can be many things, in a swamp like setup, a deep sand bed works great as an anaerobic filter, whole there's no mechanical filter though.
