then i added amquel plus along with my established filter but took it out because i had to add melafix.

The water change didn't cause the ammonia spike - taking out the filter did that. Do another large partial water change as an emergency measure to reduce the ammonia and nitrite NOW, and then hopefully your filter will recover and clean up the rest. Do frequent water tests to make sure the ammonia and nitrite are coming down. Ohh.. and dont feed the fish for a few days (will reduce the ammoina input to the system)
