if your only looking for one pair, i would keep the most colored one that hides then start weeding out the other males and keep all your females. but keep at least two other males so theres a lil competition when they start pairing up.
I would pick choice a. He will come out of his shell soon. Especially with a female in there. If you want to breed then the male with the most colors.
I chose the most dominant out of a tank at the LFS 4 times and EVERYtime, it ended up being a female. They were all about 3 inches at the time. I finally just took 3 and ended up with 1 male out of the 3.
