Do a water change and yes the tannins could still be in the water and lowering the Ph.

just came home from work, and the fishes was almost half head... now im sure the tannins is sitll in the water... the PH reading was below my color strip readings "pure yellow" i did a water change and added alittle baking soda and now my fishes are ok... i did a 30% water change. im scared this will happen again but next next time i wont be so lucky and my fishes will be dead... please help me. any good advice would be great.

ty all for taking your time to help a newbie out

I wouldn't think the tannins would be affecting your cycling. The only true way to know the status of your cycling is to have all of your 3 major readings. You have the ammonia, but you still need the nitrite and nitrate. Without those everything is speculation, and with the ups and downs you are unfortunately going through, speculation doesn't help any. This is why some people (myself included) don't like the idea of fish cycling. It just makes things harder on you. I would suggest pulling the fish so you don't have to worry about harming them, and using bacteria starter. Have patience, and don't give up!!!
