If the eel was feeding then I would check your nitrate as I suspect this could be an issue to rule out. Use a new test kit and not dip strips.
If any fish ever looks sick then test the water straight away no matter how busy you are and then do a 50% water change.
I have a lot of experience with spiny eels and they do tend to die in 100 to 200 ppm nitrate if exposed for long periods.
