I think the final picture with the bunch of rocks looks best. Don't you think if you keep switching it the sharks won't be able to get used to the aquascaping? Maybe readjusting it every time they seem to get somewhat stuck is a bad idea?

Yea i haven't adjusted it since they got put in there, but i know what your saying. I think ill leave it.
 
You could just fill both ends full of rocks and make caves then leave a hudge open center. Like rocks out to a ft or 2 on each side so hes got room. Then the sharks get the middle
 
My main concerns would be how comfortable the animal is, and maximizing space for them to live in. I would use as little rock as possible, but also make sure there was some structure for the eel and the shark. You might consider a pvc frame to lay LR on so that it looks big, but actually is pretty wide open on the inside.
 
That tank looks great.

You did as much as you could with those big ass boulders. Not very pleasant rocks to scape with. You could only do more with other rocks than what you have I beleive. If you want more i would select some of your largest boulders and sit them flat on the bottom and buy some shelf-like peices (old plate acropora long-since calcified into rock) to attach them with a two part epoxy mix so they sit like umbrellas shading the sandbed. Also you can span some more lightweigh and porous rock accross two nearby base boulders to form bridge-like structures (similar to this reef tank http://www.youtube.com/watch?v=sVNTCaO4OKw )

Anyways, As-Is its a great tank.
