Id let the dempsey go solo, they get a good size but not too big for a 55. Putting anything else in there may be too much. You could do a bunch of the smaller africans. I think 11 is a good number for that. Look up Red Zebras, Snow White Socoloffis, Yellow Labs, Kenyi (Most any of your Mbuna Species, those are just the more color brilliant colored ones)

i have never herd that you have to keep an oscar in 75gal and oscars rarely ever get up to 16 or 18 in that would have to an oscar that is at least 15 years old, more likely older
all of these sites, witch are all about oscars, all say that they only need a 55 gal tank
