I haven't seen it done before, but I don't see why it couldn't. I think it might depend on the method used for the etching though. The only time I've seen glass etched was by covering the pane with adhesive paper, lightly cutting out the area to be etched, lightly pour a specific acid(don't remember what kind) onto the exposed glass, rinse after a few minutes and you're all set.
I think you should be fine since that method doesn't eat away the glass as much as it "frosts" it. I know if you leave it on long enough then it will eat down enough to possibly weaken it, but you just want the discoloration then it shouldn't effect the strength. I'd maybe practice on some random pieces of glass first to get your timing right though.
