Fahaka Puffer Death Investigation

Hey Everyone, just trying to figure out what went wrong with my puffer. He was about 5 inches and had him for the past 2 months. Had him in a 75 gallon tank until he got bigger. In this tank all he had was a big piece of drift wood/fake plants and sand. His water changes was very few days about 25% mainly to vacuum out food. His filtration is 2 Seachem tidal 75s. The water parameters at his depth was the following: He pretty much ate Krill everyday, then suddenly seemed not interested then died less than 24 hours later.

Ammonia 0
Nitrite 0
Nitrates 20
PH 6.0
Temperature 78-80

So far I think it was the either the PH being at 6 because of the driftwood. I used to try and keep it at 7, but was told consistency is more important so decided to leave it where it naturally would sit at. Or possibly oxygen maybe? I don’t run an air bubbler and rely solely on the surface agitation from the Seachem filters.

What do you guys think?
 
I think there was a swing in the PH and caused the death of the Fahaka Puffer. Sorry for the loss.
I have had the driftwood in here for over a year, but few months with the puffer. Think a ph swing could still occur? Figured it would have been stable at 6.0, but idk.
 
Was his diet varied at all or just krill? Not saying this is the cause but may have contributed?!
