On a happier/weirder note, I’m seeing my black peacock do something weird. He just randomly swims around with rocks in his mouth? And then he drops them on top of other fish? No idea why he’s doing this but it’s fun to watch.

That’s cool, but I don’t think that’s a peacock, looks to be a hap, maybe a hybrid. Milingu

Looks female to me. The bodyshape reminds me of Copadichromis.
Does it sometimes show two or three black spots instead of stripes?

Yes, when it's stressed it's body turns grayish and there's 2-3 spots.

If it is female, that could be why your other was killed, it’s best to have all males or 1 male to 3-5 females
