For fresh: Red Tail Cat

Salt has the classic Great White Shark, a 1.5 tonne killing machine. Truly the monster fish. (unless you look into extinct fish and consider the megalodon)

For salt I have actually kept, it has to be the frogfish.

The Coelacanth has the greatest fish story of all time. Also props to the Megalodon, and I love my loaches, especially the Monster Clowns.
