Id go with an ackie or a freckeled monitor ... they stay small have good personalities and are affordable... if you want to be hardcore kimberlies are exeptional and so are pilbaras, but they command a pricey tag on them.
 
i am in love with varanus cumingi and varanus salvator marmoratus..... but theyre hard to come by.. when the time is right i will get some in outdoor enclosures.
 
Whatever you decide on do you research. The only book I trust on savannah monitor care is
"The Savannah Monitor Lizard - The truth about Varanus exanthematicus" By Daniel Bennett and Ravi Thakoordyal. Daniel Bennett is a worlds authority on monitor lizards, and is currently involved in monitor conservation projects through out the world. Check him out at mampam.com.
I don't mean to offend anyone, but the sad truth is that most 'dog tame' savannahs are just slowly dieing. I use the savannah in my avitar for education and I trust him completly, but he still lets me know when he is in a bad mood by tail whipping and hissing.
Please read this book and pass the information on.
 
I have a 4 year old Savannah, here are some pics to show you how tame she is. I love her she is very lazy but will be extremely active when I get her out. She really likes eggs if you can't tell. hehe

I think ackies are the best beginner monitor. Not all Sav are "dog tame" they can be nasty.

Did you ever think of trying a Black and White Tegu? Never had one myself but I have heard that they have more stable, less aggressive attitudes than most monitors.
