In the pic he is just sifting through sand, his diet is frozen brine shrimp and frozen mysis shrimp, some vitachem added for supplement.

Have you ever tried blackworms?

I get freeze dried ones, but the fella isn't very interested in them, my first H. niloticus was the best, ate everything that was offered, including Pellets, such as Hikari cichlid Excel, this one wouldn't accept any.

That was how mine was,it would try to eat anything that I offered it.I may get another one some day.

You must keep one, I gave all my other arowana away, and this is the only species of arowana I like to keep
 
You've probably tried this, but what about gradually mixing pellets into his diet? Also in my experience, picky eaters are more likely to accept flaked food, though that may foul your water.
