Congrats on finding them a home.

In regards to how you transport the fish, I would use a large hefty bag/liner zip tied shut and placed inside of a large rubbermaid type container. Having the fish in a large bag tied shut will prevent water from getting all over the place as you drive them to their new home. I've done the whole rubbermaid containder without a bag and water ended up everywhere.

BTW, what size tank does the new owner have?
 
When I gave my 26" pacu away, I drained the tank to about a depth of 6". The fish was laying flat. I then took a large fishing net and caught the fish. Water went everywhere including the ceiling. Very stressful. The fish was put in a large container with battery operated air pump. Glad you found a new home for the fish. It took me two years to find my fish a home. Good luck with moving them.
 
Well we're on the move!
The Pacus are loaded up and we now have an hour long drive to drop them off. They seem to be doing good so far. I've taken photos of everything so far so ill post them all tonight when we get home.
