Update - just wanted to say thank you to everyone for the advice.
Took some time to decide what I really wanted with the tank and have chosen to leave the fire eel, rehome everything apart from the Arowana and go down the Stingray route, most likely a single BD male.
I also took out all of the hardscape (rocks and wood) and found parts of rotting food etc... which I believe was adding to the issues with Nitrates. Going to go with a bare tank for the new setup now. Will be posting updates and pictures in Stingay forum in a month or so once I have got the rehoming done and BD back in.
PS - aware the setup needs upgrading in the future and already have this arranged for start of next year once we are in the new house (wife will kill me if I stick another tank in this one)
