So I have 2 firemouth cichlids and 6 mollies for dither/target fish. Should I get anymore fish or just leave it at that it's a 55 gallon tank.

Firemouths are pretty mellow and the tank is large enough for them to cohabit fine. I often see FMs combined with swordtails.

Lolz. I would assume the mollies would be fine. I have two Blue Acaras and a handful of guppies in a 55 gallon tank. I didn't plan it that way, just kinda happened.

Also, I suppose some sort of schooling fish wouldn't hurt if you wanted some more color. Maybe some Cats of some sort? I guess Id have to know what you wanted to do to the tank because you could just as easily leave it as you could add to it.

In that case you could add Tetras or barbs. Just make sure the teras are big enough to not get eaten. Black neons are some of my favorites. Tiger Barbs also are nice. I have a few in with a Blue Acara in a 29 gallon and they get along nicely. The Tiger barbs are very lively and colorful.

As for bottom feeders I am not sure. I haven't kept very many. A few cory cats maybe? I can't see a problem with that, but I mean someone else might be able to say otherwise.

Thanks for you ideas and response. I will have to think and maybe do a little research before I decide what I'm gonna do.

You could add more firemouths if you want, they do best in groups.you want more females than males and you want lots of hiding places and territories. They are very interesting fish when housed this way.
