First Fish-Less Cycle

Big Difference Im not sure what happend but Yesterday I Did add a little more water to top off the tank cause it was gettin low due to evaporation... Added Prime before adding water to the tank...
Here's the results..

Ph 7.6
Ammonia 0 ppm
Nitrites 5.0 ppm
Nitrates 80 ppm
 
I tested the tank just a few mins ago could someone tell me whats goin on???? I believe the tank is close to fully cycling no matter how much ammonia i add its always gone in 8-12hr the nitrites are stayin at 2.0 ppm i was doing 1 teaspoon then i added 2 teaspoon then today i added 3 teaspoons and everytime it goes back to 0 ppm if im right the nitrites will drop rapidly it was a 5.0 yesterday and this morn it was a 2.0 ppm so if its consuming all the ammonia then im just waitn for the nitrites to drop then preform my WC then add fish correct??
 
Well tank has cycled as of June 25 the tank Parameters were triple 0 across the board... took exactly 1 month 5 days to cycle added 2 oscars & 1 common pleco to test and make sure everything is good and that i wouldnt lose any of my prized fish... and fish are doing great waiting on a few fish to come in this week gonna give my mom the oscars and get my GATF & 2 VATF in the tanks to grow them out a lil bit bigger...
