First Mushrooms of the Season

Porcini are my personal favorite....Hen of the woods are out now....they will improve after the first hard frost.....Morels are harder to find but closer to truffles in intensity.....I wish the Oregon truffles were more fragrant! More like the chinese then the French or Italian. I sell truffles....the first white Alba are in....2350. per lb for small......3300. per lb for large.....still a bit immature. Price should eventually come down to around 1600. Here are some shots of the worlds most elegant fungus....and the second most expensive food in the world. As modeled by my lovely daughter!

Nice truffles! I agree that the Oregon Truffles aren't really all that special. I have found a lot of Winter White truffles, but the photo of the black one is the only one I've found. The truffles are found by raking the duff in young Doug-Fir plantations, not the most scenic hunting...

I really do prefer Hedgehogs over Chanterelles, but they are both good. I especially like the texture of the Hedgehogs, and they have a really nice delicate nuttiness.

If you want a mushroom hunting buddy let me know. I've never done it but have wanted to, and I don't even like mushrooms. I just like harvesting wild edibles. I'm not going after mushroom until I go with someone who knows their stuff. Though I do own and have read the book "The Savory Wild Mushroom" by Margaret McKenny.
 
I LOVE Chanterelles! I was actually thinking of some Mushroom recipes for work. Got a few cases from the other department. Oysters, Chanterelles, Porcinis, Kings...I wanted to do more than just Sauteed Mushrooms or a Ragout. You find Truffles too?!:bling:
 
mmm i love mushrooms especially sauteed in butter or portabello mushrooms grilled with olive oil and salt... :drool: not much hunting over since i live in las vegas lol
