Well I just picked up my first polypterus (ornate) 2 days ago and I think I am going to be hooked to them haha. He/She is about 4.5" atm and currently in a 75 with a few of my SA cichlids. The cichlids will be moving to their new 180g home here pretty soon and I would like to dedicate my 75g to some Bichirs.

Is a 75g tank an ideal tank for an adult bichir? If so, about how many could I keep in total? Also, what are some good tankmates for them?

I also have a question about feeding. On his/her first day in the tank he fed on beefheart with almost no hesitation, didn't really seem to go after the krill or the bloodworms just yet. I also got him to eat a couple shrimp pellets, which I hear is pretty rare. How often shall I feed him a cube of beefheart?

If I get into them enough, the bichirs may end up taking the 180 over the cichlids lol

you can keep lower jaw species in the 75 like senegals, polli, etc. if you want em to grow fast you can feed em everyday. if you do move to the 180 you can get some lower jaws like laps and endlis
 
As said above the upper jaw species will be ok in a 75 but the lower jaws will need the 180 so move the cichlids and get some endlis to go with your ornate(lower jaw too).
Try to get them eating pellets asap but feed them a varied diet.
