You'd be surprised. They are nocturnal and it might be a smaller one. Plus they are ninja stealthy.

You only think you can see the whole tank. There are several square feet of nooks and crannies in your live rock where any number of things can live under the radar. I agree that you should sit and watch, but also add another dither as prey. If your fish are gone, the hunter might not emerge. Until it's really hungry and desperate.

I actually like mantis shrimp a lot, my first saltwater tank is going to be dedicated to solely housing a mantis shrimp.

I remember the time one showed up in my tank. Scary looking. Sort of like a shrimp mixed with a wasp and a lobster.
