Wow.If you've already got all of that going on then I am at a loss of what else to suggest for you.I've got AC running all the time. 2 fans running. Atm I have 1 smaller fan pointing towards the tank and its gotten quite cooler.

Ice in a bag will not cause any sudden temperature changes. Imagine putting 3 ice cubes in a glass of 81 degree water. Does the ice suddenly melt turning the water suddenly cold?
Let's do the math:
One half cubic foot of ice weighs 28.5 lbs. That's a LOT of ice. Let's assume it's 20 degrees.
The water in a 75 gallon tank weighs around 626 lbs. Let's assume it's 81 degrees.
If the ice were placed in the tank and if all the heat energy from the water was instantly absorbed by the ice, the tank temperature would suddenly drop by 2.7 degrees.
Not much. And of course, it won't be instantly.
Ice isn't a problem.
Great idea. You should invest your money into a chiller (I'm pretty sure it's not a big deal of financial issue if you owning a beast PC with 3 monitors), it's probably cheaper and less headache than a constant a/c running and doesn't help much to reduce your tank water temp.
