I guess to get the buckets out in the water you could swim them out thats the only tricky part, not sure how smart swimming chum buckets away from a dock is, but you gotta risk it to get it haha
Hey JD7, I plan on fishing off a dock, I have one heavy duty salt rod/reel PENN combo with I believe 80 lb braided power pro line on it currently; and another salt rod rod reel combo w/ similar setup. I do plan on going out at night; the dock is decently lite. I have seen a shark off this dock the last time I went, want to say it was a good 5 ft long-do you think my gear is ok?
What I've been reading is to keep a good what, 2ft of wire leader, then about a rods lenght of a heavy lb mono like 150lb or so, incase the line rubs against the sharks gritty body...is this a good idea?

You can definitely chum off the dock especially if you have some current moving through the dock. My favorite shark bait like others have said is ladyfish filleted up both sides. I use premaid shark rigs from mustad that are like $2.49 at Walmart for 2 of them. The braid sounds good but make sure you have a large spool because from a dock you will not be able to follow the shark as it pulls line. I regularly catch sharks from my kayak and they become tow boats as soon as they realize they are hooked haha.
